Dry-aged Italian Guanciale, from Italian food valley area of Emilia Romagnia. Guanciale traditionally comes from pork jowl or pork cheek. This cold meat has a deliciously rich, intense flavour.

Guanciale is a type of salumi, made from cured pork cheek. This delectable, robustly flavored meat is seasoned on the surface with salt, pepper, sage, rosemary and garlic. It is then dried and aged for at least 3 months, concentrating these flavours.

Pairs well with/serving suggestion

Guanciale fat lends marvelous flavour to any meal, especially pasta dishes. The flavour is so strong that a little bit of the meat goes a long way in a meal. It’s famously found in spaghetti alla carbonara or bucatini all’amatriciana.
