VINIFICATION AND REFINING — Harvest carried out entirely by hand in crates with subsequent soft destemming. Fermentation in steel lasts approximately 30-40 days at a controlled temperature. Refinement in 25hl wooden barrels lasts approximately 30 months. Once this period is over, the final assembly and bottling are carried out with a further period of refinement in the bottle of at least 6 months.
